Apple Galette

This is probably the easiest apple recipe that I have ever made.  It looks really fancy and like it took a lot of time but honestly, it takes about 15 minutes to prepare and 20-30 minutes to cook.  There is a great debate on what type of apple to cook with but I will always prefer the Honey Crisp apples when available.  Of course, these are always a little more expensive but I think they have the sweetest flavor and they are hardy enough to stand up in the oven.

Ingredients

  • One sheet puff pastry
  • 1 egg, for egg wash
  • 1 tbs water, for egg wash
  • 4 honey crisp apples, peeled, halved, cored and thinly sliced
  • 1/2 cup sugar
  • 1/2 tsp. cinnamon
  • 3 tbs. unsalted butter, cubed
  • 1/4 cup apricot preserves
  • 1 tbs brandy
  • 1/4 cup thinly sliced almonds

Recipe

Preheat oven to 400 degrees.  Take the puff pastry out of the freezer 30 minutes before preparation of remaining ingredients.  Unfold the puff pastry and be careful not to tear the pastry.  Place pastry on a baking sheet lined with parchment paper.  Combine the sugar and cinnamon in bowl and then add the apples to coat the apples evenly.  This will make about four rows on the puff pastry.  Overlap the apples about 2/3 on top of the other and then dot each row with the butter, make sure you create a small “crust” so that the pastry will puff up along the edges.  Make the egg wash by whisking the eggs with the water.  Use the egg wash along the sides of the pastry and make sure it is on every exposed part of the pastry.  Place the pastry in the oven and bake for about 15 minutes but be sure to rotate at least once in the oven.  The most difficult part of this recipe is making sure the bottom doesn’t burn.  While the pastry is baking put the apricot preserves and brandy in a small sauce pan and cook until it is combined and thinned out.  In the last 5 minutes of baking, sprinkle the almonds on the galette and place it back in the oven to roast the almonds.  When the galette has finished baking brush the apricot mixture on the galette and make sure you cover the entire dish.

Serve the galette warm with either vanilla ice cream or fresh whipped cream.  I hope you enjoy this dish as much as I did.
