Tandoori Chicken with Roasted Cauliflower

Tandoori chicken is one of my most favorite dishes!!  It is incredibly versatile and can be used with a variety of dishes.  The spices are incredibly fragrant and warming and soak into the meat in a wonderful way.  I do not make a traditional tandoori chicken because I use boneless chicken instead of bone-in chicken, but I think the preparation is still just right.

Ingredients

  • 3 tbs vegetable oil
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp. ground turmeric
  • 1 tsp. cayenne pepper
  • 1 tbsp. garam masala
  • 1 tbsp. sweet paprika
  • 1 cup Greek yogurt, you can use plain yogurt but I like the tartness of Greek yogurt
  • 2 tbsp. lemon juice
  • 2 tbsp. minced garlic
  • 2 tbsp. minced fresh ginger
  • 1 tsp. kosher salt
  • 6 boneless, skinless chicken thighs, I like to use chicken thighs because they are easier to cook and they cook quicker

Recipe

In a small sauce pan add the oil and all of the spices.  Toast the spices in the pan until they are fragrant, about 2 minutes.  Let the spice mixture cool while you mix the yogurt, salt, lemon juice, garlic and ginger in a large bowl.  Add the cooled spices to the yogurt mixture.  Add the chicken to the yogurt mixture and cover with saran wrap and put in the refrigerator for at least 4 hours.  Preheat your grill to medium-high heat.  Take the chicken out at least 30 minutes before you are ready to cook the meat so that it cooks evenly.  Before you place the chicken on the grill make sure to get the excess marinade off the meat or else it will stick to the grill.  Grill the meat for about 5-6 minutes on each side and make sure that you let the meat rest for at least 5 minutes.

I served this dish with roasted cauliflower which I seasoned with cumin, turmeric, paprika, salt and pepper and then drizzled with olive oil.  I also thinly sliced one onion to mix with the cauliflower so it didn’t dry out.  I roasted the florets on a large baking sheet at 425 degrees for 25 minutes making sure to shake the pan at least twice while cooking.
