If you want to visit an area of France that is not too far away from Paris but has a much quieter and simpler feel, visit Reims, France.  Not only is it the place where Germany surrendered in WWII, it is also the area where you can sample real French Champagne.  I floated on bubbles for four days in this beautiful town and toured one of the oldest wineries in France.  The Reims Cathedral is one of the most beautiful cathedrals I have ever seen and has a sacred feeling when you enter the building.
