I had a similar dish when I was in New Orleans and it blew my mind. I had never had figs before, other than a Fig Newton, and I loved everything about them. The dish I had was sweet, savory and very filling. As soon as I got back from my trip I knew I had to try and recreate this amazing fig dish.
Ingredients
8 Figs, halved
1/4 cup balsamic vinegar
4 tbs. honey
1/2 cup fresh cherries, pitted and halved
1 cup mascarpone
1/2 cup heavy cream
1 tsp. vanilla extract
2 tbs. sugar
Recipe
Preheat your grill to a medium high heat. In a small sauce pan pour the balsamic vinegar, honey and cherries and heat bring to a boil. Once it begins to boil reduce the heat to a simmer. Before the sauce becomes too thick, dip the halved figs in the sauce and bring to the grill. Continue to reduce the sauce until it thickens and coats the back of a spoon.
Put the figs on a hot grill and grill for 6-8 minutes, flipping once. You can also broil the figs if you want.
Once the figs are grilled, using a stand mixer combine the mascarpone, whipping cream, sugar and vanilla extract. Mix until it is light and fluffy.
Plate the dish by putting some of the mascarpone cream on a small plate, then put 3 figs on the plate and drizzle with the balsamic glaze. Make sure you get some cherries on the plate as well.
