Peach Crisp

One of my favorite things about summer time is that my favorite fruits are in season and absolutely delicious.  My favorite summer time fruit is the peach.  I love everything peaches: the taste, the smell and the texture.  Both cooked and uncooked there is nothing better than a ripe juicy peach.  The smell of ripe peaches when I wake up in the morning always starts my day off right.  I look forward to the first bite of a peach, the firm outside and the juicy inside, there is absolutely nothing better on a hot summer day.

I had a special request for the 4th of July and that was to make an old fashion peach crisp.  The combination of smells: the cinnamon, the butter, and cooked peaches, make this dessert an oldie but goodie.  There is a reason the recipe has been around for such a long time, it is because it is so easy and so scrumptious.  I am very traditional when I make this dessert, there are only a few ingredients needed but the combination of sweet and salty is second to none.  The final addition to the dessert is French Vanilla ice cream, the  reason I bring this up is because after extensive taste testing I decided that I like French Vanilla ice cream better than regular Vanilla ice cream.  I like being able to see the little bits of the vanilla bean and I like the richer taste of egg within the ice cream, making it taste more like a custard.   The combination of hot peach crisp with cold ice cream makes this recipe one of my top summer desserts.

Peach Crisp
Filling
3 cups sliced peaches
2 tbs. softened butter
1 tsp. white sugar
Crumble
1/2 cup brown sugar
1/3 cup flour
1/3 cup old fashioned oats
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. kosher salt
5 tbs. softened butter
Preheat oven to 350 degrees.
Slice peaches and sprinkle with sugar.  Place peaches into buttered casserole dish.  Mix together crumble ingredients until all flour and oats are combined with butter and spices.  Sprinkle the crumble topping over the peaches and make sure that the entire dish is covered with the topping.  If there are any gaps or visible peaches make sure they are covered so that the peaches will cook completely and that the liquid does not evaporate in the pan.  Place the dish in the preheated oven and bake for 30 minutes or until the dish starts to bubble and the topping is golden and cooked completely.  Depending on your oven you may need to cook for longer.  Let the dish cool slightly and then serve with ice cream.
